There is so much to love about watermelons!
Not only are they the quintessential summer fruit, but they are very low in calories and sodium and are also packed with fiber and essential nutrients that help fight inflammation and prevent cancer. Watermelons are 92% water so they are a refreshing way to help stay hydrated in warmer weather.
My kids love to pick up giant watermelons whenever they’re at the supermarket with me. But, I never seem to be able to fit THAT much watermelon in my refrigerator at one time. So, recently I decided to use up some melon by making it into a juice.
As always, I’m all about making things easy in the kitchen. To the watermelon, I add an orange and some mint from my garden. I throw in some ice and blend it all right in my Vitamin! In 5 minutes you can have a cool, refreshing drink right at your fingertips! And the kids will love it too!
Tip: I tend to like the pulp of the watermelon in my drink, but if you aren’t a fan, you can just strain the juice before serving. Also, using chilled watermelon will make this drink even more refreshing!
- 4 cups cubed watermelon (*see tip above)
- 1 orange (peeled and cut in half)
- handful fresh mint leaves
- large handful ice
- Blend all ingredients together in a high powered blender.
- Serve immediately or chill in refrigerator.
- If refrigerating, stir before serving. (*see tip above)
