Quick Weeknight Meal: Soba Noodle Salad with Trevisio & Peanut Sauce

  • 16 oz soba noodles
  • 1 mango (peeled and cut into large cubes)
  • 1 cup Trevisio Radicchio (or red cabbage) sliced thin
  • 3 radishes (thinly sliced)
  • 2 avocados (pitted and cubed)
  • ½ cup chopped peanuts
  • small bunch Thai basil leaves (roughly chopped)
  • 1 tbsp low sodium soy sauce (gluten free if you are following a gluten free diet)
  • 2 tbsp creamy peanut butter
  • 2 tsp agave nectar or honey
  • 2 tbsp coconut water
  • 1 tbsp fresh lime juice
  • ¼ cup sesame oil
  1. Cook noodles according to package instructions
  2. In meantime, prep vegetables and fruits
  3. Combine peanut butter, soy sauce, agave, coconut water, lime juice and oil in a small bowl and whisk until combined
  4. Add noodles, trevisio, radishes, fruits and peanuts to a large bowl then pour on peanut sauce
  5. Top with Thai basil
