Roasted Acorn Squash

Serves: 2-4 (as a side dish)
  • 1 acorn squash (sliced as shown above)
  • 2 tbsp brown sugar
  • 2 tbsp butter cut into small cubes + more for baking dish
  1. Preheat oven to 425 F
  2. Lightly butter a 13 x 9 in baking dish
  3. Place squash in dish and sprinkle with sugar and butter
  4. Roast for 25-30 min until golden brown and tender
  5. Transfer to platter and serve warm or room temperature
