The Ultimate (Super Grains) Veggie Burger

Serves: 5 burgers
  • 1 cup cooked Super Grains mix, or quinoa
  • 1 lb mushrooms {mix of cremini and shitake) (*remove stems of shitake) } finely chopped
  • 1 carrot
  • 1 onion
  • 1 clove garlic
  • 1 large egg (beaten)
  • ¼ cup rolled oats
  • ½ cup breadcrumbs
  • 2 small sun dried tomatoes packed in olive oil
  • 1 tsp dried oregano
  • 4 tbsp extra virgin olive oil
  • pinch kosher salt
  • pinch pepper
  1. Cook grains and cool slighlty in a large bowl or make in advance.
  2. In a food processor, combine carrots, onion, garlic and sun dried tomatoes and pulse until finely chopped.
  3. Heat half the olive oil on medium heat in a large skillet or nonstick frying pan.
  4. To the skillet add the mushrooms and carrot onion mixture, pinch of salt and pepper and sauté for about 4 min.
  5. Empty sautéed ingredients into the bowl with grains.
  6. To the bowl add in oats, breadcrumbs, oregano, egg and mix together to combine.
  7. Using a ½ cup measuring cup, scoop mixture and shape into patties.
  8. Heat the remaining olive oil in skillet and fry patties for about 4 minutes per side until golden brown.
