Watermelon and Cucumber Salad with Watercress

Serves: 4 servings
  • 1 small bunch of watercress
  • 2 cups watermelon cut into 2 inch cubes
  • 2 cups cucumber sliced and quartered
  • 3 oz. crumbled feta cheese
  • ¼ cup kalamata olives
  • ¼ cup olive oil
  • 1 tbsp balsamic vinegar
  • good pinch kosher salt
  • good pinch pepper
  1. Combine watercress, watermelon, cucumbers and olives in a bowl or on a platter.
  2. In a separate bowl, whisk together the olive oil, vinegar, salt and pepper to make the dressing.
  3. Pour dressing onto salad and combine.
  4. Top the salad with the feta cheese.
