Spiced Apple and Almond Energy Bites

Serves: 10 balls
  • ½ apple roughly chopped (with skin)
  • 1 cup pitted dates
  • ¾ cup rolled oats (use gluten free oats to make this a gluten free snack)
  • 3 tbsp almond butter
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp vanilla
  1. In a food processor, combine dates and apples and pulse until pieces are very small.
  2. Add in remaining ingredients and pulse just until all ingredients are blended together.
  3. Roll into small balls (about 1½ in. diameter).
  4. Refrigerate at least 20 minutes to set them.
  5. Store in an air-tight container and refrigerate for up to 5 days.
