End of Summer Red Lentil Pasta Salad

  • 1 lb. red lentil pasta
  • 1 zucchini (quartered and very thinly sliced)
  • 1 fresh corn (shucked)
  • 1 pint cherry tomatoes
  • crumbled feta cheese
  • herbed red wine vinaigrette (see above)
  1. Boil water for pasta and cook according to directions.
  2. Drain and let cool.
  3. In meantime, prep veggies.
  4. Once pasta is cooled, toss in the veggies and dressing.
  5. Top with crumbled feta.
  6. Serve room temperature or cold.
