There aren’t many ways I can get my kids to eat kale. In fact, there is probably only one way, and this is it. Even adults who despise the thought of kale, embrace this vibrant and refreshing summer slushy I’ve created (minus the toxic food coloring found in most kinds of slushy type drinks).
I LOVE the fact that I can give my kids something they actually enjoy along with a super boost of vitamins and antioxidants! It’s not that I hide the kale from them either. I don’t think that is a very effective strategy in getting children to embrace plant foods in the long run. When I told them what was in their glass, they were pleasantly surprised that one of the vegetables they prefer not to eat, tasted soooo good in a cold, fruity drink.
It can be a frustrating process (I mean, insanely frustrating) incorporating certain foods into children’s diets. Parents should try to experiment with different textures and flavors (whether it be frozen, raw, pureed, liquid or cooked) before giving up on a particular food. And just as adults prefer to eat food that is visually pleasing, so do children. I think the bright purple color of this slushy certainly does the trick!
- 2 cups FROZEN organic mixed berries
- leaves from about 5 stalks of kale (center stem removed)
- 1 cup mango or orange juice
- ½ cup coconut water
- Place all ingredients in a high powered blender until smooth and thick.
- Pour and serve into chilled glasses.
