I created this dressing to go with my Warm Apricot and Fig Salad, but it would go nicely with any salad. I especially love it on grilled vegetables and fruits. The lemony fresh flavor of the thyme adds another layer of depth to whatever it’s added to and is so simple to make. You will love the way your kitchen smells when you make it!
- 1½ tbsp. sherry vinegar
- ¼ cup extra-virgin olive oil
- 1¼ tsp. honey or ½ tsp. agave nectar
- leaves from 3-4 sprigs of thyme
- ½ tsp. kosher salt
- ¼ tsp. pepper
- Combine all ingredients and whisk together. Store at room temperature for up to one week.
